What is the best way to cook a fish?

The best way to eat a Fish is definitely by steaming.

This is especially so when you have a Fresh Fish! Through steaming, you are able to savour the taste of its Seawater Freshness - slightly salty and mildly sweet.

Think of the Japanese, the freshest fish are eaten Sashimi Style, unmasked by any heavy sauces.

If the fish is not fresh, spices and condiments are usually used to camouflage the fishy taste of the fish.

In terms of steaming, many people tend to do it Cantonese or Teochew Style.

Here is our favourite recipe you can try to steam your fish.

(Pssst... you don't have to be an exceptional cook to steam a fish well! Fresh Fish will always taste good steamed.)

TEOCHEW STEAMED FISH

Steamed Fish with Preserved Vegetables

Duration: ~20 minutes

What you need:

1 Medium Whole Fish (~500g-600g)

Ginger Slices

2 Medium Tomatoes (cut into wedges)

50g Thinly Sliced Salted Vegetables (add more if desired)

Diced Chilli Padi (optional)

1 TBSP Hua Diao Jiu

1 TBSP Light Soy Sauce

5 TBSP Water

How to Cook:

1. Places several ginger slices in the fish.

2. Score across the flesh of the fish and place the fish on a plate.

3. Mix the Hua Diao Jiu, soy sauce and water and pour the mixture evenly across both sides of the fish.

4. Add the remaining ginger, tomatoes, salted vegetables and chilli padi over the fish.

5. Make sure the water in the steamer is BOILING before the fish goes in.

6. Steam the fish on high for 15 minutes. 

7. Serve steaming hot with rice!
